“You’d Hogtie Your Own Nana for this Stuff”
She’s a chili girl, that Amber is. She has loved it since she was just a tiny thing, filling up on mom’s ground beef and kidney bean chili, made with grandma’s homemade chili starter!
It was the best she’d had … until her partner decided to make her some.
She watched as the chili was being made: “Corn? In chili? What? Something other than red beans? Gasp. The horror! And where was the beef? What was chili without meat?”
Amber was sure her mom’s recipe was best, and that her partner “was ruining [her] childhood chili! And wasting a perfectly good jar of Grandma’s homemade starter!”
She digressed, however, and now must share this vegetarian chili recipe with us.
Chili to “Hogtie Your Own Nana” Over
Into a crock pot, toss:
half a bag of frozen corn
1 tin black beans
1 tin white beans
1 tin dark red beans
1/2 c chopped sweet onion
1 jar/tin chili starter (slow-boiled pickled tomatoes and peppers)
1 heaping spoonful of minced garlic
1 large tin peeled roma tomatoes
1 large tin crushed tomatoes
1 small tin diced tomatoes with green chilis
1 can garlic tomato paste
1/4 c brown sugar
“The herbs… well. Here’s the list. You sort of ’shake shake’ and ‘pinch of this’ and ‘dash of that’ as you like it.”
basil, bay, garlic, paprika, pepper, chili powder, parsley, marjoram, thyme, cinnamon … and dill. “Don’t ask,” Amber heeds nay-sayers off, “Just do it.”
Put the cover on, turn the crock on low … and walk away.
Serve over hot rice, with or without sour cream/cheese.
Does she miss her mom’s chili? “Sometimes … but not that much.”

This sounds divine! I’ll add these ingredients to my shopping list and make it this week.
I also have a question for you, Sally. What is a good substitute for tofu? My family would rather starve than eat anything with tofu. I’ve tried a variety of ways, and I have to admit that I’m not so fond of it either. Any suggestions? TIA!
