Recipe Sunday
As summer is approaching, or well, here now I suppose, it’s about time for me to pack away my cold weather recipes. But first, let me throw one more out there for you: A vegan crock pot (slow cooker) wonder.
The night before cut into bite size pieces:
eggplant![]()
mushrooms
onion
carrots
celery
tomatoes
potatoes
garlic
In the morning, put in the crockpot:
everything you cut up last night
can of tomatoes or pasta sauce or tomato paste
spices such as: oregano, salt
Set on low if you will be ready to eat in about 8 hours, or high if you’ll want to eat in 4 hours.
Eat alone, or serve with pasta or rice.
