In Cannellini Heaven: Recipes for the White Bean

white-bean-spreadI made a special trip to the local Super Fresh, where dented cans are on display and available for half off the price this past weekend. As I was perusing the regulars - green beans, corn, baby food, potatoes - I struck gold. It appeared as if someone had dropped an entire case of canned cannellini beans! Even though I take public transportation and had to carry home on the bus everything I bought, I snagged 12 canned goods for $6. Five were cans of the delicious white beans.

Since then, I’ve made white bean hummus and stir-fries - a particularly good ginger lime one tonight with zucchini, tomatoes, and beans. But now I’m bored. What next?

* Eat, Drink & Be Vegan incorporated yams into her white bean hummus.

* Eden Organic brand of canned foods suggests a cannellini bean, tomato, and basil crostini as a delicate appetizer similar to bruschetta.

* The British Channel 4 created a stew-like, tomato-based vegetable and Italian bean casserole.

* A user on Spark Recipes posted an unexpected salsa combining tomatoes, avocado, white beans, and spices.

* On Lauren’s Vegan Journal, there’s a yummy sounding - and looking! - kale and cannellini soup. Like me, she seems to create as she goes so there is no set recipe to follow. She based the idea off of soups from Tuscany.

* For the warmer days, the Perfect Pantry has a creative cannellini antipasto salad. The full recipe is not vegan, but all you have to do to make it so is don’t serve it along side a scoop of canned tuna.
