Dad’s Bean and Corn Salad Recipe

People often want to know about my family’s eating habits: Was I raised vegetarian? Are any of them vegetarian, too? What do they think of the way I eat?

While I could - and will later - go on for a whole post just on my family dietary dynamic, today is Sunday, thus it is time for a recipe. So I bring you, a recipe from my family, specifically from my dad. It’s a cold corn and bean salad that is perfect to take along to summer BBQ’s and picnics and works well as a main dish for veggie people or a side dish for meat eaters.

Proportion to taste (my preferences shown in parentheses):

Beans (40%)
I prefer small black beans. Drain and lightly rinse canned beans. To do this right, I should (but don’t) cook beans fresh and let cool.

Corn (30%)
Fresh cooked corn, sliced off the cob really brightens this dish. Frozen small white corn is my second choice.

Sweet Pepper (20%)
RED are the way to go, IMHO. You loose the color highlight with yellow and green are too strong for this dish.

Onion (10%)
Vidalia or other good sweet onion for me, but any will do.

Sauce
Varies by whim. I might throw together a little mayo, cucumber dressing, sugar (just enough to get a slightly sweet taste) salt, pepper, basil & cilantro. Some healthy oil and a few spices of choice for purer eaters. A splash of white wine or lime are good if you like those flavors – if not, experiment with your own splashes.

Mix your preferred ingredients at your preferred proportions gently. Let it sit for a couple of hours, if you have time. I like it best the second day.

    It does sound good.
    I sometimes make a corn salad with tomato, so I highly recommend throwing in a tomato. Good for color and taste!
