A Lunch Date with a Sandwich

“What do you eat for lunch?” People ask me this as if being vegan means preparing lunches are any harder or easier. I eat salads, left-overs, and more just like they do. However, I do not have as many sandwich options. So today’s recipe Sunday is a few vegan sandwich options.

Pile on any of the following, if your sandwich starts to get to full, fill up a pita pocket instead of bread. Use veggies raw or roasted:

*Tomato
*Sprouts
*Lettuce
*Spinach
*Veggie Cheese
*Hummus
*Onion
*Cucumber
*Red Cabbage
*Veggie Deli Slices
*Olives
*Peppers, raw or roasted red
*Shredded Carrot
*Mushroom
*Spices, Oils, Salad Dressing, or Vegan Mayo
*Sliced Tofu, Seitan, or Tempeh
*Veggie Burger
*Pickle
*Portobello
*Asparagus
*Fresh Herbs
*Pesto
*Apple, Pear Slices
*Nut Butters - peanut, almond, pumpkin seed, etc.
*Jam, Jelly, or Preserves

I’m stuck on PB&J, so I will try a new sandwich this week and let you know what combo of ingredients I prepare and how it tastes.
